I'm currently trying to run (i)odbc through the php extension.

The build-in Apache-PhP5 in Capitan is not installed with the extension ODBC. Capitan中的内置Apache-PhP5没有安装ODBC扩展。 Prefer to install a new config with brew and the extension odbc. 更喜欢使用brew和扩展名odbc安装新配置。
