I want to run ctakes with the AggregatePlaintextProcessor or something that doesn't require a connection for UMLS.

I'm just getting started with cTAKES and had a similar question when i first installed it. 我刚开始使用cTAKES，当我第一次安装它时也遇到了类似的问题。
From your cTAKES home directory run this: 在您的cTAKES主目录中运行以下命令：
bin\runctakesCVD.bat desc\ctakes-clinical-pipeline\desc\analysis_engine\AggregatePlaintextProcessor.xml
