Nginx and php-fpm only works on some php pages. whats wrong?

Question

I am setting up a little raspberry with nginx and PHP at home. Before I was using an synology nas with apache and PHP.

now I run in problems with the setup. and I can't figure out why. When I run an php-info site it shows all info.

on some PHP sites, I got the error that "an error occurred" from nginx. my nextcloud tells me "internal server error"
